You can really get away with only eating one slice of topped bread, but I enjoy it so much I eat two slices as my dinner. (Alton recommends brisling sardines for their mild taste.) Drain oil from second tin into another bowl. Whisk in vinegar, parsley, and lemon zest. Add fish and stir to coat. (BE GENTLE, or the fish will fall apart) Set aside for one hour.Just before the hour is up, set your oven to broil. Brush bread with remaining oil. Place oil-side up on baking sheet and broil 3 inches from heat source until golden brown and crispy, about 2-3 minutes.Halve avocado and remove pit. Use a fork to mash avocado while still in skin.
