Here is how you make Spicy Tomato-Seafood Stew:

Saute chopped garlic in large pan in 1 T olive oil over medium-high heat. When garlic starts to sizzle, add tomatoes, salt and pepper. Bring to boil, then lower heat, add okra (optional) and simmer for 30 minutes. In a separate pan, cook shrimp and scallops in 1 T olive oil over medium-high heat for about 2 minutes, or until shrimp turns pink. Transfer seafood into tomato mixture. Add parsley and heat for a few minutes more to blend flavors.Those seeking more carbs can serve over pasta or rice or with crusty bread.
