This is a tuna mac recipe I adapted from Skinny Taste's "Lighter Baked Macaroni and Cheese." I added tuna, peas, and mushrooms. It came out wonderfully. What Are The Ingredients For Lighter Tuna Mac Recipe?The ingredients for Lighter Tuna Mac are: 12 oz elbow macaroni (high fiber or protein)1 T butter 1 T light butter 1/4 c flour 1/4 c minced onion 2 c skim milk 1 c fat free chicken broth 8 oz reduced fat mild or sharp cheddar salt and pepper 1 c fresh spinach, chopped 1 c frozen peas, thawed 8 oz baby portabella mushrooms, sliced 2 2.6-oz packets of low sodium tuna, drained 1/4 c grated parmesan 1/4 c panko bread crumbs (or crumbs of choice) pam cooking spray How Do I Make Lighter Tuna Mac?Here is how you make Lighter Tuna Mac: Cook pasta according to package directions; drain. Spray a baking dish with butter flavored Pam. Preheat oven to 375 degrees.In a large skillet, melt butter. Add flour and cook over low heat, stirring with wisk. Add onion and cook another 2 minutes. Add milk and broth and continue wisking, raising heat to medium-high until it comes to a boil and becomes smooth and thick. Stir in mushrooms and season with salt and pepper. Once it becomes thick, remove from heat, add cheese and mix well until cheese is melted. Stir in spinach and tuna. Adjust salt and pepper to taste. Pour cooked macaroni into baking dish. Pour mixture in skillet on top of macaroni and stir well. Top with grated parmesan cheese and bread crumbs. Spray a little more Pam on top. Bake for 15-20 minutes, then broil a few minutes to get the breadcrumbs golden.
