Makes 4, 3 oz servings.1. Combine honey mustard, maple syrup, lime juice, and 1 Tablespoon of the olive oil in a bowl. Mix together and set aside.2. Put remaining 2 T olive oil in large heavy fry pan and heat to medium high.3. When pan is hot, add tuna and sear for about 1 minute per side, or to desired doneness. Salt and pepper both sides of the tuna as it cooks.4. Remove tuna from pan, plate and spoon sauce over fish.
