6 tuna steaks, 5 - 6 oz each
1/2 cup cracked black pepper corns
1/4 cup toasted sesame seeds, plus some for garnish
Seasoning salt to taste
1 Tbsp olive oil

1/2 Tbsp butter
1/4 cup shallots, chopped
2 Tbsp soy sauce
3/4 cup chicken broth
1/4 cup dry white wine


How Do I Make Pepper Crusted Tuna?

Here is how you make Pepper Crusted Tuna:

Preheat a heavy (cast iron) frying pan to high heat. Mix cracked pepper and sesame seeds on a plate or shallow dish. Press both sides of tuna steaks into the mixture to coat. Brush pan with olive oil. Place tuna steaks in pan and allow to sear on high for 3 - 4 minutes on each side, just until the edges are browned, but the inside of the meat should still be raw. Set steaks aside.In the same pan, melt butter, then add shallots. Saute until soft, about 3 minutes. Add the soy sauce and chicken broth, then wine, deglazing the pan. Allow to simmer about 6 minutes until slightly reduced.To serve: Place tuna steak on a bed of lettuce with tomatoes and avocados if desire. Spoon sauce over steak and salad.
