1/4-1/2 c. thinly sliced red sweet pepper
1/4-1/2 c. thinly sliced orange or yellow pepper
1/4 c. thinly sliced red onion
1/4 c. chopped fresh cilantro
Emeril's Essence (spice mixture)
3 T. olive oil, divided
Juice from one lemon
2 T. white wine



How Do I Make Tuna Steaks with Peppers?

Here is how you make Tuna Steaks with Peppers:

Thinly slice the peppers and onion. Heat a fry pan with half the olive oil. Saute peppers and onion until just tender. Add the lemon juice, wine and cilantro and simmer until liquid has reduced and nearly evaporated. Set aside and keep warm.Liberally coat both sides of the tuna with Emeri'ls Essence. Heat a non-stick fry pan with remaining oil. Saute tuna on one side for a couple minutes then turn. Cook until medium rare. The center will still be very pink but the outer edges will be white.
