1 jar spaghetti sauce
12 oz uncooked lasagna noodles
1/2 tsp Italian seasoning
4 cups shredded, red. fat mozzarella cheese

Preheat oven to 375. Coat 13X9 inch dish with nonstick cooking spray. Heat oil in large skillet over medium heat until hot. Add vegetables and garlic. Cook & stir 5 minutes until tender.Combine ricotta, parmesan, egg substitute, Italian seasoning, garlic salt & pepper in medium bowl.Combine tomatoes & spaghetti sauce in another medium bowl. Spread 3/4 cup tomato mixture in prepared dish, place layer of noodles over tomato mixture, overlapping noodles. Spread 1/2 of veggie mixture over noodles, top with 1/2 ricotta mixture. Place 1 cup mozzarella over ricotta mixture. Place 2nd layer of noodles over mozzarella. Repeat. Place 3rd layer of noodles over mozzarella. Spread remaining tomato mixture over noodles. Sprinkle remaining 2 cups mozzarella evenly over top. Cover tightly with foil and bake 1 hour. Uncover; bake 5 minutes until cheese is lightly browned.
