2 slices low fat cheese (or 1/2 cup shredded cheese of your choice....try asiago!)

Here is how you make Willow's fish and veggie bake:

preheat oven to 350Lay 2 large sheets of tin foil on a sheet panSpray the center of each with cooking spray.In the middle of each, place sliced tomato in a large enough radius to be a bed for the filets. Top with 1 fish filet each. Then pile on the veggies. Sprinkle with spices. I like Spike Veggie seasoning, but any will do. Close each up in it's own sealed packet pinching over ends to secure.Bake for 50 - 60 minutes until flesh of fish is opaque and firm. Open packets, put cheese on top and close foil back up and put back in oven for 5 minutes to melt. Serve alone, or with brown rice or whole wheat pasta on the side.
