This is an adapted version of a Brussels Sprout recipe from Australian ABC's "The Cook and the Chef". It's very easily made with other veggies such as broccoli and mushrooms. You can also omit the bacon and onion... I kept it in, coz it was in the recipe but I won't add it next time. You can also use any cheese you like. I use parmesan or a hard goats cheese because the flavour travels further. This dish is also lovely with chestnuts and you can add herbs such as thyme. I put this recipe under "vegetarian" coz it almost is. I prefer it without the bacon!

500g Brussels Sprouts
Cauliflower, small head
40g Butter
40g White Flour
500-600 ml Milk (2%), soy is also fine
100g - Parmesan Cheese or gruyere or hard goats cheese, grated
1 small onion, chopped
1 rasher bacon, cut into small pieces
1/2 tsp ground nutmeg (freshly ground is best)
salt and pepper to taste
1 tsp Olive Oil

Here is how you make Brussels Sprout and Cauliflower Mornay:

6 medium servings for a main dish. (I eat it as a main dish with a salad accompaniment). It would serve 8 or more as a side dish.If you divide the meal into 4 large serves, as I did tonight, the calories come to 374. But I think the serve was too big and I ate too much so I've modified the recipe to serve 6!DIRECTIONSCut a cross at the bottom of the brussels sprouts. Cut and/or break the cauliflower into small florets. Steam until tender.Arrange in an ovenproof dish.Saute onion in a pan with a little oil. Add the bacon and set aside when cooked.Melt butter in a saucepan. Add flour and stir till it becomes a paste. Slowly add milk. Stir continuously with a whisk to avoid lumps. Don't worry too much if it's a tiny bit lumpy. Cook for about 5 minutes. Add the bacon and onion (or omit altogether). Season with nutmeg, salt and pepper. Pour mixture over brussels sprouts and cauliflower. Sprinkle a little extra cheese, pepper and a tad more nutmeg on top.
