Here is how you make Skinny Crepes:

Makes 14 crepes to serve 7 (2 each!)In a blender, whiz around the 4 egg whites until frothy. Add in milk (can use soy), vanilla and powdered sugar. Whiz around again. Add in flour, baking powder and salt. You got it: whiz around, but just for a bit - just till everything's mixed, otherwise your crepes will be tough and rubbery.*Refrigerate batter for 30 minutes.* Spray a non-stick pan with cooking spray, or wipe with a small amount of oil. Pour in a little of the batter; gently tilt the pan all around to distribute the batter.
