Heat 1 tsp of olive oil in a large cooking pot. Add onion, bay leaves and thyme. Let it simmer for a bit until onion goes soft. Add leak and cellery until soft. Add tapwater and bouillon. Bring to a boil. Add tomatoes, fresh and sundried. Once it boils, let simmer with lid on for about 20 - 30 min until everything is soft. Blend well. Done! Fresh tomato soup!
