Add cut up chunks of chicken when onions begin to caramelize and cook on medium heat. 3. Take out butternut squash and let it cool while chicken cooks. You may cover dish with chicken to help it cook faster. 4. When chicken is no longer pink, add lite coconut milk, seasonings and chunks of butternut squash. 5.
