Parmesan Cheese, shredded, 4 tbsp
Egg, 1 large
Egg white, 2 large
Vegetables of your choice, about 2 cups (I usually use mushrooms, zucchini, and/or spinach)

Preheat oven to 350.Cook pasta according to package instructions.Prepare vegetables to your liking.In a large bowl, combine ricotta, half the mozzarella and Parmesan, eggs, vegetables, salt and pepper until well blended.Add the cheese mixture to the pasta and toss lightly to blend.Spread a small amount of sauce in the bottom of a baking pan. Add the pasta mixture. Top with sauce and remaining cheese. You may reserve some sauce for serving on the side, or use the whole jar.Cover with foil and bake for 25 minutes.
