What Are The Ingredients For Broccoli and Cheddar Frittata Recipe?The ingredients for Broccoli and Cheddar Frittata are: 3 large eggs1.25 cups egg substitute 2 TBSP water 2 tsp olive oil 1 small onion cut in half sliced thinly in half moons Original recipe calls for 2 cups broccoli - I use: 1.5 cups broccoli .5 cups other veg (I use a marinated eggplant/bell pepper) black pepper to taste 1 oz. Kerrygold reduced fat cheddar 1 oz Tillamook medium cheddar 2 slices bacon, cooked and crumbled How Do I Make Broccoli and Cheddar Frittata?Here is how you make Broccoli and Cheddar Frittata: Preheat the broiler Combine the whole eggs and the egg substitute with water and whisk well.In a medium ovenproof nonstick skillet, heat the oil over medium heat. Add the onion and cook while stirring for about 3 minutes (until the onions soften). Add the broccoli (and other veg) and cook for another 2 minutes. Season with salt and pepper. Pour the egg mixture over the vegetables, covering them evenly. Reduce heat to medium low and cover. Let cook until the egg mixture has set around the edges of skillet, but is still somewhat liquid in the middle - about 8 minutes. Sprinkle the cheese and then the bacon on top evenly. Place the skillet about 2 inches under the broiler until the surface is set and somewhat golden brown - about 1 to 2 minutes. Watch carefully - if it gets overcooked the egg mixture will be tough. Cut the frittata into 8 wedges and serve.
