1 pint Fresh Oyster Mushrooms
1 lb hamburger meat
1 24 oz Jar Francesco Rinaldi Marinara
4 oz dry mini rotini
1 cup low fat cottage cheese
1/4 cup Kraft Parmasan Cheese
1 cup mozzerella
2 TBS Extra Virgin Olive Oil
Italian Seasoning
Pepper
Salt


How Do I Make Swiss Chard Mock Lasagna Casserole?

Here is how you make Swiss Chard Mock Lasagna Casserole:

Wash and chop Swiss Chard. Separate steams from leaves. Separate green stalks from white onion. Chop green stalks and add to Swiss Chard leaves, and chopped white onion to stems. Wash and slice mushrooms.Start boiling water for pasta.Add pasta and cook until al dente. In another pot brown hamburger meat. Drain when browned, add marinara sauce and 1/4 cup Parmesan cheese.Season to taste. In a skillet, saute mushrooms/white onion/Swiss Chard stalks in 1 TBS olive oil until stalks tender. Set aside in a bowl when stalks are tender. In the same skillet add 1 TBS olive oil and Swiss Chard leaves/green onion stalks. Saute until leaves are tender and wilted.Layer the meat sauce on bottom of casserole dish, then the cottage cheese and the Swiss chard leaves. Layer some mozzarella cheese, then some pasta. Next layer half of remaining meat sauce. Mix the rest of the meat sauce with the stems/mushroom mix and layer that on top. Add remaining mozzarella cheese.
