2 ground chicken burgers, crumbled and browned

Here is how you make Chunky Chicken and Veggie Pasta:

Cut eggplant into bite sized pieces, add to a large sauce pan with tomato sauce, canned tomatoes, and mushrooms. Add salt and pepper to taste along with any other spices you like. I use fresh basil, cayenne pepper, chopped garlic, and dried oregano. While the sauce is simmering, brown and crumble the chicken patties in a small saute pan greased with cooking spray. Season the chicken well with salt and pepper.Allow the sauce to simmer until all the flavors have combined - 40 min to an hour. In a separate pot, boil the water for the pasta. Before draining, add spoonfuls of the starchy water to the sauce until it reaches the desired consistency. Add the chicken to the sauce at the very end so it doesn't become soggy, but does absorb the flavors of the sauce. Drain the pasta and serve with sauce.
