6 oz. vermicelli
2 tsp. olive oil
3 cloves garlic, minced
3 medium summer squash, cut lengthwise, then sliced
1 red bell pepper, cut into 1/2 in chunks
3/4 tsp. dried sage
1 1/2 c. diced tomatos (or 1 - 14 oz. can diced tomatoes)
1 T. balsamic vinegar
1/2 tsp. salt
dash pepper
2 T grated parmesan cheese

Here is how you make Chicken with Vermicelli and Summer Squash:

Boil vermicelli according to package, set aside. In a large nonstick skillet, heat the oil until hot but not smoking over low heat. Cook chicken in 1 tsp. oil til cooked through, remove from pan. Add 2nd tsp of oil and add the garlic and cook, stirring frequently, until fragrant, about 30 seconds. Increase heat to medium and add squash, bell pepper, and sage and cook, stirring frequently, until the vegetables begin to soften, about 3 minutes. Add the tomatoes, vinegar, salt, and pepper and cook about 4 minutes longer. Add chicken, then toss with the pasta.
