1 14 oz jar of artichoke hearts - canned in water - drained and quartered
1 - 15 oz can diced tomatoes , basil, garlic & oregano
2 handfuls Spinach, fresh
1.5 tbsp Extra Virgin Olive Oil

Drizzle the olive oil in a hot saute pan.Add the chicken ( I used about a pound of chicken tenders)Saute on both sides until brown about 2 -3 minutesAdd the drained and quartered artichoke hearts and the can of tomatoes cover and simmer about 10 minutes until the chicken is done.Add two handfuls of fresh spinach and cover until wilted.
