1 cup Shredded Cheese (I use Italian Blend, but mozzarella is probably good too)

Here is how you make Low-carb Lasagna:

Preheat oven to 350.Halve spaghetti squash and cook in microwave (remove seeds, add some water, and cover with plastic wrap) 8-10 mins. Let stand for 2 mins to cool, then use a fork to shred the squash. While squash is cooking, brown turkey sausage and drain. You could mushrooms during this step too. Mix ricotta and cottage cheeses in a small bowl. Mix spaghetti squash with the tomato sauce in another bowl. Spray a 9 x 13 casserole dish with cooking spray and cover bottom with the squash and sauce mixture. Layer the ricotta-cottage cheese over the squash and top with some sauce sauce.Sprinkle with the shredded cheese and bake for 15 mins or until cheese is melted and lasagna is heated.
