Cook until turkey is no longer pink. Stir in tomatoes, tomato paste, oregano, and a little salt and pepper to taste. Turn on simmer and cook on low while you are making the noodles.Boil noodles according to directions on bag (10-12 minutes). Drain in colander and run cold water over the noodles. Add 1 cup cottage cheese to noodles and mix well.Spray a 13x9" casserole with a little Pam. Put a little sauce in the bottom of the pan and then add 1/2 the noodles. Layer 1/2 cup mozzarella, followed by half the sauce. Next, put in the rest of the noodles, followed by 1/2 cup mozzarella, and the rest of the sauce. Sprinke with parmesan cheese.
