1 tsp oregano, dried
1 tsp salt
freshly ground black pepper
1 Tbsp. Extra Virgin Olive Oil
2 cloves garlic, chopped
8 oz plum tomatoes, seeded, peeled, chopped
1/2 cup red wine
2 Tbsp lemon juice, freshly squeezed


How Do I Make Mediterranean Pork Roast?

Here is how you make Mediterranean Pork Roast:

Preheat oven to 400. Rub surface of meat with oregano, salt and pepper. Heat the oil over high heat in a shallow ovenproof casserole. Cook the garlic in the oil for a few seconds, then add the meat and sear it on all sides. Surround the meat with the tomatoes, wine and lemon juice. Roast uncovered turning and basting the meat occasionally and adding more liquid if necessary. After 1 hour, insert a thermometer and cook until internal temp is 160.
