Mix thoroughlyWhen the vegetables are soft enough for your taste, cover them with the egg and spinach mixture. Place a well-fitting lid over the skillet, and turn the heat down to low-med. You don't want to cook it too fast or the bottom will be too done. Once the top of the eggs are done - no longer wet - the dish is complete. Remove the skillet from the heat and add the cheese - I just tear pieces and place them over the top. Once the cheese is melted you cut the fritatta like a pizza and serve. It will make 4 servings.
