1 T. extra virgin olive oil
1 medium onion, chopped
3 cloves garlic, crushed
1-2 cans chicken broth, lower sodium
1 can diced tomatoes, with juice
1 zucchini, diced
1 cup carrots, diced
1 can red kidney beans, rinsed and drained
1 can garbanzo beans, rinsed and drained
1/2 c. orzo pasta
1 T. dried basil
1 T. dried oregano
1 package frozen spinach, thawed and drained
1 T. Parmesan cheese

Here is how you make Spinach Minestrone:

Saute onion and garlic in olive oil until tender. Add broth, tomatoes, zucchini, carrots, kidney beans, garbanzos, herbs, and orzo. Bring to a boil. Add water to make more like a soup, less to make more of a stew. Add spinach and return to a boil. Reduce to simmer 5-10 minutes.
