In a large bowl, stir together the butter, banana, applesauce, vanilla, and brown sugar. Add the flours, salt, baking powder, rolled oat flakes, walnuts, and dates. Dough will be stiff. Spoon a heaping tablespoon of dough onto a cookie sheet and press flat with your fingers. Bake for 12-14 minutes or until golden. Makes approximately 31 cookies.
