pre-heat oven to 450 degrees.On a cookie sheet lined with foil place the sliced eggplant and spray with cooking spray.Bake eggplant for 20 minutes, then turn and bake for another 10 minutes.While eggplant is browning ,in a medium skillet add 2 tablespoons of canola oil and saute the onions and garilc until fragrant, then add the lamb and brown until no longer pink.remove from stove and add the allspice, cinnamon and corriander,stir well.When eggplant is done remove from oven and turn the oven down to to 350degrees.Place the egglant in a baking dish and cover the eggplant with the tomatoes and the lamb mixture.Sprinkle the parmasian over all and bake for 30 minutes or until the cheese is melted.When done remove from oven and let rest for a few minutes.Number of Servings: 2Recipe submitted by SparkPeople user ONE4THEROAD.
