Here is how you make Cauliflower Grilled Cheese Sandwiches:

Chop cauliflower into florets and put into a food processor. Pulse it until it looks like rice. Once done put it into a microwave safe bowl. Cook in the microwave for 8 minutes on high. Once this is done let it cool down for a few minutes because you will be touching with your hands and you want it cool enough to handle. Using a dish towel (or two) remove the moisture from the cauliflower. You want to make it as dry as you can by squeezing out all the moisture. Once it is dry whisk your egg and add it to the cauliflower. Add in the mozzarella cheese.Preheat oven to 450 degrees. Line a cookie sheet with parchment paper. Divide the cauliflower mixture into 4 equal parts. Form each part into the shape of a slice of "bread". Bake 16 minutes.Remove from oven and cool the cauliflower bread until completely cool. Heat your skillet. Place a tablespoon of butter in the pan and let it melt. Place two pieces of the bread on the melted butter, golden side up. Make sure the lighter side of the bread is facing the pan. Top with two slices of cheddar cheese. Place the tops of the sandwiches on the cheese with the lighter side of the bread facing out. Cook about 3 minutes on each side or until golden brown and the cheese is melted. Serving Size:?makes 2 grilled sandwiches
