1/2 cup Tomatoes, chopped
1/2 cup Onions, chopped
1 Jalapeño Pepper, chopped (optional)
1/2 tbsp. Olive oil
1 Garlic clove, minced

Here is how you make My Chicken:

1. Chop, mince, and shred all the required ingredients.2. Heat a skillet with Olive oil.3. Add minced Garlic and stir fry for about 30 seconds.4. Add onion and stir fry for about 1 minute.5. Add Jalapeño and add for another 1 minute or so.6. Add Tomato and shredded chicken. 7. Stir everything together and cooke for about 10 minutes or until all ingredients are incorporated.8. Add salt and pepper to taste.Serve with tortillas or just by itself. I love this with corn tortillas!!Makes: 2 servings, amount of 1 thigh each and equal parts of veggies.
