Add rice to a saucepan of boiling water and cook for 12 to 15 minutes. Heat a non stick frypan coated with cooking spray and cook chicken until golden brown. Remove and set aside.Add soy sauce, lime rind, lime juice and coriander to the pan and bring to a simmer.
