drizzle of EVOO
2 cups broth (chicken or vegetable)
Asparagus, fresh, approx. 15 spear, cut in 1" pieces
Grape Tomatoes (3oz/12 tomatoes)quartered
Basil, 4 tbsp finely chopped
*Extra Virgin Olive Oil, 4 tbsp or 1/4 cup
Garlic, 1 tsp or 1 clove
Crushed Red Pepper, 0.25 tsp
Salt, 1 tsp
Pepper, black, 1 tsp
Chicken Breast (cooked)about 2 cups chopped
Parmesan Cheese, grated 1/4 cup

How Do I Make Chicken Quinoa Salad?

Here is how you make Chicken Quinoa Salad:

rinse quinoa in fine mesh strainer, pat dry. Drizzle small amount of olive oil in saucepan. Place quinoa in olive oil and slightly toast, or until water evaporates. Pour in 2 cups broth, bring to a boil. Boil for 5 minutes, cover and reduce heat to low, cook for another 15 minutes. Remove from heat for 5 minutes before fluffing with a fork.
