What Are The Ingredients For Chicken Salad with a simple Dijon Recipe?

The ingredients for Chicken Salad with a simple Dijon are:

0.25 cup (8 fl oz) Yogurt, plain, whole milk
1.0 tsp Garlic powder
1.0 tsp Mustard seed, yellow (ground- I like to use Penzys)
4.0 dash Pepper, black
0.25 tsp Poppy seed
1.0 cup, diced Celery, raw
2.0 oz (20 halves) Pecans
3.0 tsp Granulated Sugar
0.33 cup Cranberries, dried, sweetened (craisins)
1.0 serving Granny smith apple - 1 med. apple
1.0 tbsp Hellmann's Mayonaise
1.0 cup Grapes - red or green - 1 cup
1.0 cup Canned Chicken Breast Members Mark
3.0 tbsp White Vinegar

-OPTIONAL-
These are a combination of additions and or substitutes for elements in the dish, but the nutrition info is for the recipe above.

*shredded carrots
*dried cherries or blueberries
(Instead of cranberries. They are yummy!)
*Sesame seed
*Walnuts or pistachios (pistachios add a buttery/salty taste and a less crunchy texture)
*Water chestnuts as a taste alternative to celery. If using these, add these to the sauce at the same time as the chicken because chestnuts tend to be a blank slate taste wise.
*A garlic clove if you prefer a more savory rather than sweet sauce. I recommend smashing the juice from a heated clove, then finely chop and add to the mix.

How Do I Make Chicken Salad with a simple Dijon?

Here is how you make Chicken Salad with a simple Dijon:

Start with the powdered mustard, vinegar and sugar. Mix until there are no longer lumps. Mix the garlic and pepper into the mustard sauce as well as the yogurt and mayonnaise. Be sure to get rid of all lumps or you will have bitter mayonnaise blobs! Add cornstarch to thicken if desired. Add the canned chicken to absorb flavor. Set aside. Chop the pecans, if needed, as well as the grapes and apple into bite sized pieces. Stir into the mix until the dressing is coating everything evenly. (Now would be the time to add in the carrot shreds) Finally, add the cranberries or other dried fruit to the mix. It is ready to serve or refrigerate. Note- You can make the sauce less sweet with more yogurt or more tangy with more mustard (or vinegar if you prefer a more subtle hint of mustard). The yogurt and mayonnaise ratio is as low as can be to cover the rest of the ingredients. Serving Size: 8- 1/2 Cup servingsNumber of Servings: 8.0Recipe submitted by SparkPeople user JEELFO.
