1. Pre-cook chicken (I make 3-4 breasts at a time, boiled in water with lemon juice, basil, & rosemary) Seal in container with some juice to keep moist.2. Chop up 1/4 of a head of lettuce (about three cups)3. Cut up 1/2 of one chicken breast and add it to salad.4. Top with 1/8 cup of cheese & 2 Tbsp of any salsa you prefer. I love Tastefully Simple's Corn & Black Bean Salsa!
