Dice chicken into 1/2" pieces and season with salt & pepper. Dice onion. Julienne carrot. Saut? chicken and onion until chicken is cooked through, approximately 5 minutes. Add water, bouillon cubes, coleslaw mix & carrots. Bring to a boil. Reduce heat and simmer 10 minutes. Remove from heat and stir in lemon juice.
