Wash and then dry okra very well. Cut the top and bottom off of the okra and cut into 1/2 inch slices. In non-stick pan add oil to medium heat. First add mustard seeds and cover pan. After seeds have popped, add cumin, ginger, hing and curry leaves. Stir well then cover and keep on medium heat for about 10 minutes, stirring occasionally. Then add salt, cilantro and lemon juice.
