1 cup dry bulgur or 3 cup hydryated
2 Tb olive oil
20 cherry tomatoes, halved
4 cups fresh beet greens or other greens
3 cloves minced garlic
1 Tb red wine vinegar
1 cup cooked or canned lima beans (drained)
herbs to taste (I added 1 tsp lemon pepper and 1/2 Tb Zatar)

If not already hydrated, soak bulgur in hot water until liquid absorbed, about 20 minutes. Press out excess water.Steam beet greens on low until wilted with garlic.Combine all ingredients and stir together till well mixed.
