Potatoes and eggs best if cooked a day ahead. Cook eggs in simmering (smiling, not laughing) water for 25 minutes. Chill quickly in ice water, peel quickly and refrigerate until completely chilled.Cover washed and quartered potatoes (leave peelings on) with cold water, add 2 teaspoons salt, bring to boil (about 10 minutes), reduce heat and boil gently until fork penetrates easily (about 10 minutes).
