1 large can of salmon with juice but skin and bones removed
1/2 cup fat free egg substitute
1/2 cup bread crumbs
1/2 cup minced onion


How Do I Make Salmon Latkes?

Here is how you make Salmon Latkes:

Saute the minced onion in a non-stick pan with 1 tsp of olive oil. (You can substitute minced carrot for some or all of the onion if you prefer.)Remove the bone and skin from the canned salmon, then mash it in a large bowl with the egg substitute and bread crumbs. Add the onion (and/or carrots, if you wish) to the salmon mixture. Add pepper and salt (if you wish). Cover and refrigerate at least 20 minutes. (You can also prepare the mixture a day ahead of time.)Divide the salmon mixture into 3 balls, then subdivide each ball into 3 smaller balls. (Wet your hands, if needed.) Flatten the balls into 9 patties. Heat a tsp of oil in a non-stick skillet and cook until lightly browned on each side. You can also broil them on a cookie sheet covered with aluminum foil that is coated with non-stick spray.
