50g raw swede
350 mL cold water
A pinch of dried (or fresh) thyme
A few twists of freshly ground black pepper - or just a dash of pre-ground to taste
3g grated cheddar cheese


How Do I Make Winter Soup?

Here is how you make Winter Soup:

This is so easy. Cut the potatoes, carrots and swede into chunks. Add the preciously cooked onion, cold water and a sprinkling of herbs. I like the flavour of thyme, but you can change or add something else if you wish. Bring to the boil and simmer until cooked. It won't take long.Now use a potato masher to break up the pieces. Sometimes I leave it like this, sometimes I whizz it in the blender to make it smooth - variety is the spice of life ;)To serve - add half the grated cheddar cheese to the bottom of each serving bowl and add the soup.
