Found this soup in a diet magazine. A replacement for the old cabbage soup diet. The soup is very filling and it helps control my cravings, full of protein and fiber. I have on occasion added a can of mixed vegetables to make it different flavor is wonderful.

2 Tbs extra virgin olive oil
2 large white onions very thinly sliced
1 1/2 LBS boneless skinless chicken or turkey breast (diced)
1 large carrot, finely shredded
2 large garlic cloved minced
1 jalapeno pepper with seeds minced
2 tsp minced fresh thyme (or 1 tsp dried)
8 cups fat free natural chicken stock
1 can black beans (15oz)
1 box frozen chopped spinach
1 can of roasted tomatos
slat & pepper to taste
Parmesan cheese to taste


How Do I Make Diet Soup?

Here is how you make Diet Soup:

heat oil in large stockpot over medium heat. Add Onion stirring occasionally, for about 10 minutes, add chicken cook until chicken is cooked through and onions are lightly browned. Add carrot, garlic, jalapeno and thyme: cook another 2 minutes. Stir in broth and increase heat to high, bring to a boil. Add beans, spianch and tomato. Bring back to boil then turn off the heat.
