Here is how you make Ground Turkey + Root Vegetable Stir Fry:

- Preheat the oven to 400- Peel and chop the the beets and parsnips. Then toss with olive oil, salt, and ground pepper. Put in oven- Cook the ground turkey in a pan. When cooked set aside.- Saute the mushrooms and spinach. When finished combine with the the turkey.- After about 35-40minutes, remove the beets from the oven and toss with turkey mixture. - Season with spices as you wish.- Makes 4 lunches (I personally make this Sunday night for lunch Mon-Thurs).Serving Size: Makes 4 lunchesNumber of Servings: 4Recipe submitted by SparkPeople user GOGIRL_93.
