Here is how you make veggie santa fe burritos:

put the olive oil in a fry pan. add the onions, peppers, corn , garlic and cook until softened. about 15 mins. cook the instant brown rice in a seperate pan. add the beans and tomatos to the onion, pepper and corn mixture. cook until tomatos have broken up and moisture mostly absorbed. dice up i chipolte pepper and add also add 1tsp adobo sauce. more or less for personal preference. put 2 tbls masa flour in 1/2 cup water, stir to dissolve. add to corn mixture to thicken. add spices and rice off heat. scoop into tortillas and roll. i freeze these and microwave for 2 mins for a quick lunch. i also use a frzen bag of mixed peppers and onions to save time.Number of Servings: 10Recipe submitted by SparkPeople user .
