How Do I Make Fajita Bake?

Here is how you make Fajita Bake:

Slice 1 onion and 2 bell peppers (I use 1 red and 1 green) into very thin strips and saute with a little minced garlic in 2 tsps. of olive oil over med. high heat. After peppers and onions are soft add in chicken sliced into strips and brown. Mix packet of taco seasoning with 1/2 cup of water to dissolve and pour over chicken and veggies. Mix together in pan with 1 can of drained mexican petite diced tomatoes adn 1 can of drained black beans. In microwave, cook 1 1/4 cups of minute rice in 1 1/4 cups water on high for 5 minutes and let stand till water is absorbed then add to mixture. Season to taste with more cumin, garlic powder, and salt. Pour into casserole dish and top with 1/2 cup 2% shredded cheddar cheese and bake uncoverd in a 375 degree oven for 20 minutes.
