Here is how you make Bean and Vegetable Burritos:

combine chili powder, oregano, and cumin in small bowl. set aside.layer peeled and diced sweet potato, beans, half of chili powder mix, garlic, thinly sliced onion, minced and seeded jalepeno, green pepper, remaining half of chili powder mix, and corn in slow cooker. cover and cook on low 5 hours or until sweet potato is tender. stir in lime juice and cilantro (about 1 tbs.)preheat oven to 350. sprinkle 1/4-1/3 cup of cheese into center of each tortilla. top with 1/4 of filling . fold all 4 sides to enclose filling place burritos seam side down on baking sheet. cover with foil and bake 20-30 minute or until heated through. serve with sour cream, guacamole, salsa, etc. if desired.Serving Size: makes 4 very stuffed burritosNumber of Servings: 4Recipe submitted by SparkPeople user PHOENIXJPK.
