Here is how you make Southwestern Breakfast Burrito:

- In a medium non-stick skillet, saut? sweet bell peppers, green bell pepper, and onion in 1T olive oil over medium-high heat until soft. Pour peppers and onions into small bowl, set aside and allow to cool.- Carefully wipe out hot skillet with damp paper towel. Grease skillet with remaining ?T olive oil- In a medium bowl, mix 4 egg whites, 2 large eggs, cumin, onion powder, garlic powder, black pepper, and salt with fork or whisk until well combined.- Pour mixture into skillet and scramble until medium-hard (suggest not cooking eggs hard as they?ll cook up more when reheated each morning). Set aside and allow to cool.- Place each soft taco shell on top of a paper towel.- Assemble each burrito by layering a sprinkle of shredded cheese, and divide out the baby spinach, 1-2 spoonful of eggs, pepper/onion mix, and more cheese.
