1 pound rotisserie chicken, no skin, shredded (I calculated based on 10 oz breast meat and 6 oz dark meat)
1 Tbsp olive oil
1 bunch kale, washed, ribs removed and torn up
1 medium onion, sliced
1 red bell pepper, diced
1 jalape?o, minced
2 cloves garlic, minced
2 tsp cumin
2 tsp chili powder
1 tsp kosher salt
Several grinds black pepper
12 oz shredded cheese
18 high fiber, low carb flour tortillas (I used the large La Tortilla brand they have at Costco)

Here is how you make Joanie's Healthy Baked Kale and Chicken Flautas:

Heat the olive oil in a large skillet over medium heat. Sweat the onions & peppers til soft, then add in the garlic.Add the kale with a little water (what's on it from washing is enough) and the spices, toss to mix. Cover and steam til kale is done to your liking.Turn off heat abound allow mixture to cool to room temp.Add chicken and cheese and stir well to combine.Portion about two ounces (about the size of a hot dog) onto one edge of a tortilla, and roll tightly. Place seam side down on a baking sheet lined with waxed paper or parchment.Once all are rolled, put in freezer til frozen hard, then put in ziploc bags.To heat, either heat for 1-2 minutes in the microwave (flautas will be soft) or bake in a preheated 425 degree oven for 15-20 minutes or until tortilla edges are slightly browned and filling is bubbly.
