12 corn tortillas
1/2 cup finely shredded cheddar cheese
1/2 head lettuce, shredded
1 small tomato, diced
1 tbsp. olive oil

Here is how you make Mama Hanna's Crunchy Chicken Tacos (Baked Shell):

Preheat oven to 350 degrees. Spray or brush tortillas very lightly with olive oil. (I use a 'Misto', but brushing works well too.) Rub the tortillas together to evenly distribute the oil. Heat a pan over medium-high heat, and toast the tortillas until lightly brown (about thirty seconds on each side.) Turn off the heat. Fold tortillas in half and stack as you go. Place tortillas in the 350 degree oven with one folded half of the tortilla hanging down through the oven grate, and the other half laying flat on the top of the grates (like an open book with half the cover and pages dangling down through the rack.) Total cook time is nine minutes- watch them very carefully. Too little cooking and they will be too hard to eat, too much and they will be burnt. Reheat the pan over medium-high. Mix the chicken, water, and spices together and add to the hot pan. Reduce heat to medium, and cook until done, about five minutes.
