1/2 cup white onion, minced
1 clove of garlic, minced
1/2 cup New Mexcian chili powder
2 cups vegetable broth
1 cup water
1/2 tsp dried oregano (preferably Mexican)
1/2 tsp salt
1 15oz can pinto beans, drained, rinsed and mashed (or non-fat refried beans)
2 Tbsp non-fat, plain yogurt
2 chicken breasts, poached and shredded
12 6-inch corn tortillas
2 cups shredded cheddar cheese
1/4 cup onion, minced


How Do I Make Cheese and Chicken Enchiladas?

Here is how you make Cheese and Chicken Enchiladas:

1. To prepare the enchilada sauce: heat oil in a medium saucepan over medium heat. Add 1/2 cup onion, cook, stirring until it begins to soften, about 1 minute. Stir in garlic and continue cooking until the onion is translucent and soft, about 2 minutes more. Stir in the chili powder, add broth, water, oregano and salt. Bring to a boil. Reduce heat to a simmer and cook until thickend and reduced by about 1/3, about 30-45 minutes.2. To prepare enchiladas: preheat oven to 400 degrees. Coat an 8x8 or 7x11 baking dish with cooking spray.3. Combine beans and yogurt in a small bowl.4. Spread about 1/4 cup of the sauce in the baking dish. Arrange 4 tortillas in the dish, overlapping them to cover the bottom. Top with half the bean mixture, spreading evenly with a spoon. Sprinkle 1/2 of the chicken, 2/3 cup of chease and 2 Tbsp onion on top of the beans. Top with 1/3 of the ramining sauce. Repeat with 4 more tortillas, the remaining bean mixture, 2/3 cup cheese, remaining meatand remaining onion. Spread half the sauce on top and cover with the last 4 tortillas. Top with remaining sauce and cheese.4. Bake the enchiladas until hot and bubbly, 15-30 minutes.
