4 slices thick cut bacon
1 cup plain bread crumbs
1 1/2 tsp salt
1/4 tsp black pepper
1 cup grated jack cheese
1/4 cup olive oil

Here is how you make Chicken Viejo con Green Chile's:

1. Cook bacon until done, but not crisp.2. Combine bread crumbs, salt, pepper, mix well.3. Moisten chicken with water and dredge in crumb mixture.4. Heat olive oil in skillet and fry chicken until golden, turning once. About 5 minutes per side.5. Remove chicken from skillet into oven-proof dish.6. Preheat oven to 350 degrees while frying bacon. Drain bacon well.7. Place one slice of bacon on each breast.8. Place one whole green chile or 1/4 cup chopped chile ontop of bacon.9. Place in oven and bake at 350 degrees until chicken is done, about 35-45 minutes depending on thickness of chicken. (Chicken should be cooked to an internal temp of 180 degrees, as it will reach it's internal temp of 185 degrees during the resting period).10. Remove chicken and top with 1/4 cup grated cheese. Return to oven until cheese has melted.11.
