Here is how you make low carb chicken chile rellenos:

heat up oven on broil with the rack at the top. Rinse poblano peppers and place in the over on cookie sheet. let char on one side for about 5mins until skin is brown and flip and repeat. place peppers in a covered dish or a brown bag to steam for about 10mins. Meanwhile heat up a skillet with water about 2cups. Add the knorr bouillon to water, garlic, cumin. place the chicken breast with enough water to barely cover them. Bring to a boil and bring down to low heat and let simmer, cover and cook 10mins or until chicken is no longer pink. ***reserve cooking liquid. Dice bell pepper and onion, place in a skillet with some cooking spray. cook until soft. peal the poblano peppers with fingers pinching and pulling on the skin with nails or using a knife. cut a slit in the middle and remove seeds with a spoon( i run them under water to get all of the seeds out) shred cooked chicken with 2 forks and add to the skillet with onions and peppers. add about 1/2c of the reserved cooking liquid to the skillet and stir. Keep heat on med-low and add the hot sauce, more if you want. with a slotted spoon preferably, stuff the peppers with the meat mixture. place on a cookie sheet. separate the cheese in 3 and sprinkle on the meat mixture. Place in the over on broil and cook for about 5mins until cheese is bubbly.Serving Size:?makes 3 stuffed peppers
