Sprinkle spice mixture on both sides of chicken, rubbing in a little with fingers.Heat 2 tsp. oil in large, nonstick skillet over medium-high heat. Once the oil shimmers, add chicken pieces; cook about 6 minutes total, turning over as needed, until lightly browned and cooked through. Remove to plate.Add remaining 2 tsp. oil to skillet. Once it is quite hot, add onion; stir to coat. Cook about 2 minutes, until softened, then add zucchini, tomatoes, corn and garlic.
