Here is how you make Creamy Chicken Enchiladas (AJ):

Shred chicken and set aside. In a large bowl, combine tomatoes, soups, mild, and seasonings. Transfer 3-1/2 cups toanother bowl. Add the chicken and cream cheese to the remaining mixture in the original bowl. (To make the creamcheese easier to mix in I first put it in a small bowl with about ?cup of the soup mixture that I am adding it to and mix iton medium with the hand mixer and then add it in as directed above)Spread ? cup of soup mixture (the stuff you put aside) into each of two greased 13in x 9in baking dishes. Place 1/3 cupchicken mixture down the center of each tortilla. Roll up and place seam side down in baking dishes. (10 enchiladas perpan) Pour remaining soup mixture over tops. Sprinkle with cheese.Bake one casserole, uncovered, at 350 for 30-35 minutes or until heated through and cheese is melted. Cover and freezeremaining casserole for up to 3 monthsTo use frozen casserole: Thaw in the refrigerator overnight. Cover and bake at 350 for 45 minutes.
